Bread and Butter Pickles Small Batch Recipe 4-5 Jars

Growing up Bread and Butter pickles were my favorite! 🙂 I made these pickles with the cucumbers from my garden!

Ingredients
Brine(do not use in pickling mixture)
1/2 cup pickling salt
8 cups of water
Pickling Mixture
2-1/2 cups granulated sugar
2 cups cider vinegar (5% acidity)
1 cup water
1 tsp celery seed
1 Tbsp mustard seed
1-1/2 Tbsp mixed pickling spice
(cinnamon stick, ginger, mustard seeds, cloves, peppercorns, chilies, etc.)
3-1/2 pounds cucumbers, cut into 1/4″ slices
2 Onions Chopped

NIGHT BEFORE
1. In a bowl combine Pickling salt and water. Dissolve it

2. Chop the onions and cucumbers and remove the seeds like shown below and soak over night.

THE NEXT DAY

3. Clean your jars by boiling them in water for 5 minutes. After boiled take out and set on a towel or dishcloth upside down. Now drain the salt water off of  your cucumbers and onions.  Now stuff the cucumbers and onions into hot, clean jars. Put the jar rings and  covers in the boiling water.

4. In a seperate  pot, combine sugar, vinegar, water and spices. Bring to a boil, stirring to dissolve sugar boil for 2 minutes, then remove from heat and pour immediately into the pre stuffed jars leaving 1/8″ head space. (You may have extra brine; you can refrigerate this up to a week if you are making another batch soon.)

5. Stick a knife in the jars or something to remove the excess air or bubbles. Wipe rims clean with a damp paper cloth and add lids and rings. Process in a boiling water bath — 20 minutes for quarts, 10 minutes for pints. Begin timing when the water has returned to a boil after you submerge your jars.

Then take them out and wait for the popping! 🙂

Easy Corn Chowder Recipe

I am starting to enjoy cooking! I had some leftover ham and I have been looking for ways to use my garden potatoes a bit more that I harvested earlier in the week, so I am trying out recipes a few times until I get it just right.  I think is awesome and this is one of those recipes I have perfected to my taste! I have made corn chowder with bacon, chowder with ham, and plain corn chowder and this recipe is by far my favorite and surprisingly quick to make!

Corn Chowder basic recipe:
4-6 Potatoes peeled and cubed
1 onion chopped
1 can of condensed milk
1 large can of creme corn(or 2 small cans)
1 cup of cubed cooked ham(optional)(not the kind from a can, real ham or slices)
salt and pepper

Hidden Treasures Family Restaurant and Farmers Market Scones

Every Saturday, no matter how hard I try I find it impossible to sleep in! Today I got up extra early today, even before my morning glories to go to the market and check on jewelry orders.

My first stop at the market is still usually the chocolate section, then to scones, then maybe veggies and crafts!

I seriously think these scones could go mainstream, they are just awesome, I have tired making my own a few times, they are NEVER the same. I have had people say they look dry, and hard… NOOOOOO far far from it, they have a crust, but the inside is awesome, moist and like a flaky pastry… I wish they had a delivery service because I would order one right now. My favorite by far now is the carrot cake scone, pizza scone, onion/bacon  and pineapple coconut! If you live in Yarmouth, and you have never tried a scone from the market (or Hilltop Cottage Farms), TRY ONE.  Actually I think you should travel here just to try scones! They are awesome!

Speaking of good food in Yarmouth, NS, take the 10 minute drive out to Port Maitland and try the new Restaurant there Hidden Treasures Family Restaurant, the building used to be the old Yarmouth candy factory I am told. Inside is very neat and clean, the service is FAST, the menu prices INCLUDE TAX, the portions are large, the food is awesome!!! I am not one to go out to eat a lot, one because of the price, two I am not a fan of deep fried things. I heard people raving about how good the prices were and food and I had to go see for myself!

I had the stir-fry on rice, and a can of Diet Pepsi, wow. It came with garlic bread and everything was cooked to perfection! My total bill was $ 11.45 🙂 For how full I was and how good the food was, it was a great deal!

Rappie Pie Cooking

This one will be  chicken, I have seen, clam, lobster, pork, beef, rabbit, pretty much any meat or even veggie!

Rappie Pie

Ingredients:

1 large chicken

3 onions, chopped

12 potatoes or bag of pre grated and squeezed potatoes from the store that I used

salt and pepper

1/4 cup cubed and small pieces of pork fat

1 packet onion soup mix

1/2 tsp-1 tsp fresh savory, or poultry spice

It should have a bit of a gloss over it.

6. Slice the pork fat and lay on top of the pie raw. You can add some to the bottom as well, but again, don’t over do it.

7. In a large greased pan add half of the potato mixture. Add the chicken,  then top with remaining potato mixture. Place pork fat on top.

8. Bake for 1-2 hours, or until top is uniformly brown.

9. Eat with butter /ketchup /molasses or any other topping you desire.

 

TIPS

Measure out the amount of cups of water in your chicken pot (for Evelinas mix its 16 cups), take a visual note of the amount, so when you boil your stock to mix your potatoes, you have enough boiling stock, you may need to add water
