Another cooking post! I made my first rappie pie with this recipe!

Rappie Pie Cooking

This one will be  chicken, I have seen, clam, lobster, pork, beef, rabbit, pretty much any meat or even veggie!

Rappie Pie

Ingredients:

1 large chicken

3 onions, chopped

12 potatoes or bag of pre grated and squeezed potatoes from the store that I used

salt and pepper

1/4 cup cubed and small pieces of pork fat

1 packet onion soup mix

1/2 tsp-1 tsp fresh savory, or poultry spice

2. Cut chicken into large pieces. Place in pot with just enough water to completely cover. Dice onions and add to pot, feel free to add a bit of poultry spice, salt and pepper too and simmer until chicken is tender.

Scald the grated, de-starched potatoes in an amount of broth equal to approximately 2/3 of the water you extracted from the potatoes. (the bag will have the measurements) Blend the broth with the potatoes fast but in small parts, do not add all at once! Add 2 cups at a time, stirring takes some muscles so be prepared! Season with   1 packet of onion soup mix(taste as adding, don’t add much salt as the pork fat will add lots of salt so go easy). The consistency should be like apple sauce? 6. Slice the pork fat and lay on top of the pie raw. You can add some to the bottom as well, but again, don’t over do it.

7. In a large greased pan add half of the potato mixture. Add the chicken,  then top with remaining potato mixture. Place pork fat on top.

8. Bake for 1-2 hours, or until top is uniformly brown.

9. Eat with butter /ketchup /molasses or any other topping you desire.

 

TIPS

Measure out the amount of cups of water in your chicken pot (for Evelinas mix its 16 cups), take a visual note of the amount, so when you boil your stock to mix your potatoes, you have enough boiling stock, you may need to add water

  1. I am in Nova Scotia and several friends rave about Rappie pie. I have checked with several local restaurants and none of then serve a vegetarian version of this dish. I purchased the base potato mix and plan to cook my own. Can you recommend a vegetarian version of this dish?
