Rhubarb Crisp Recipe, Rhubarb Only Recipe

My dad gave me a rhubarb plant before he passed away.  I never actually cooked anything with it until today! Its grown like crazy every year, huge leafs and tons of rhubarb.

Normally I do not like rhubarb as it is way too sour. However this is the first recipe I have found that uses only rhubarb and I enjoy it more then anything else I have tried with rhubarb. Well except my grandmas rhubarb pie.

Rhubarb Crisp Recipe

Ingredients
4 heaping cups of cubed rhubarb soaked in water then drained well

Rhubarb Coating
1 cup of sugar( might try 3/4 next time)
1/4 cup flour
1 tsp of cinnamon

Topping
1 cup of flour
1 cup of brown sugar lightly packed
2/3 cup rolled oats( original called for 1/2, used a bit more so adjusted to 2/3)
1/2 cup melted butter

My mom is awesome and beautiful! Since she said she enjoys my writing, I decided to write about her to celebrate Mother’s Day. Love the picture above of mom, me and James, I think she looks like princess Diana.

My mom growing up did so much with us. She was my doctor when I decided to shove random things up my nose and got them stuck, my hair dresser with a bowl for measuring, an awesome cook, especially of kraft dinner. She was our brownie and scout leader, she volunteered at our school to serve hot lunches, taught Sunday school and most of all, my mom was and is my bestfriend.

Our birthday parties were awesome. We played games like the toilet paper game where we raced to wrap each other up like a mummy. The caramel game where you had to unwrap a caramels with mittens on, or hot potato, all I remember is having lots of friends and family there and having FUN!  Now as I’m older I realize how much work she put into our birthdays. She stayed up late the night before and made our cakes every year too, my favorite was the train cake.

I loved it so much! She made candy shops, dinosaurs, trucks and a barbie with a cake dress once. I realize how much hard work it was now as I made the train cake for my stepdaughter Maddy, it took hours and patience!

Love this picture! Shows the popcorn strings on the tree, I remember mom teaching us to make them with cranberries too and patiently trying to get me to not eat all the popcorn. Mom was always coming up with a new craft idea or being creative. Love my funny brother wearing his ear muffs while opening presents and also in the picture,one of our favorite Christmas presents…marble works! We were always spoiled rotten at Christmas!

Thank you for Tasha! She is like a sister to me because you babysat her so much and had her over for sleepovers. I know we got along most of the time but I was a brat maybe at times lol. Thanks for treating her like a daughter too. I am glad she was around so much as a child.

My mom the protector is what this picture makes me think. One of my earliest memories of my mom, was also one of my scariest. Not because mom was scary but because she saved me from drowning!  I do not remember how old I was but I remember vividly sitting near the edge of the water (ocean) with mom a few steps away. I was at least 4 I think? I remember sitting with my back to the water playing in the sand and a rogue wave came and knocked me back into the water and because of the undertow I could not sit back up. I remember trying so hard and then just freaking because I realize I cannot get up no matter how hard I tired, the current was too strong. Just before I needed to take a breath in, my mom got me out of the water. Thanks for saving my life mom! 🙂

This is one of my favorite pictures of mom…pure joy and happiness. Some other things I remember mom doing clearly is making me barbie clothes, making play dough, teaching me how to make Ukraine easter eggs, making many different crafts, mom was always doing something with us.

My mom is kind and completely non judgemental. What you wear, look like, age, sex, race etc. my mom is kind to everyone. It does not matter who you are! I love that mom has always accepted people for who they are.

I love the piano. Many influences like Robert Mackay and my one of my best friends Lena, kept me going…but mom first pushed me, got the piano and lessons for me. I didn’t like the lessons, but to this day I still love the piano. Oh and thanks for letting me also get out of piano lessons! I didn’t like to sit still that long lol.

Thanks for teaching me some lessons as a child too. I personally think I was a great child..didn’t do anything wrong lol.

For example when I was young I remember being out back by the sandbox with Tasha having a swearing contest lol. I am guessing I won! I should have been given an award, but got punished instead. I was so stubborn I’d find a way to enjoy any punishment you gave me lol except when you gave my Christmas Santa pin to Tasha lol. That was traumatic lol. I was a bit of a brat I guess. How did you not spank me mom?? Lol.

I remember how well me and James got along at times! I would scream if James looked at me and him the same. James would line up his army men for hours and have hundreds of them lines up, then I would fall on them, or get the dog to run through them. I would line up my crayons in a box and James would knock it over…. didn’t we give each other hair cuts too? Lol I’m sure that was so much fun for you.

Oh and mom, I promise not to make you breakfast for Mothers Day this year as I remember you saying you didn’t enjoy breakfast one year for Mothers Day. Apparently me and James took flour, eggs, milk and other things out of the fridge and mixed them on the floor and cooked it directly on the stove burner. Again, how did you not beat us? Lol

Thanks for letting me express my creativity! My aunt Shirley one year got us an art set for Christmas! I can picture it clearly as I remember loving it! I am guessing you may not, lol. Me and James got up one night and decided to paint my room! We painted chairs and antique furniture and the floor, walls, ourselves? I don’t even remember getting in trouble for it lol. But hey, I am sure that night painting, contributed to part of James drawing talent today. Thanks for striping the paint off the vanity and fixing it and still letting me keep it.

Old fashioned white bread recipe by my grandmother Elsie Mackay. You can tell she used this recipe very well! I have never made homemade white bread until recently and the purchase of my Kitchenaid mixer. I halved my grandmother’s recipe to make two loaves so the dough would fit in the Kitchenaid. Recipe is below for the readable and halved recipe.

I love making bread when I have the time watching it grow or rise and nothing beats fresh bread. The best part about this recipe is that it is a moister dense bread.

Old Fashioned White Bread Recipe

To make the dough you will need:
• 1 cup of boiling water
• 1/4 cup of white sugar
• 2 tsp of salt
• 2 tbsp of shortening (like Crisco)
Mix these until the shortening melts…
• 1 tsp of sugar

Stew and Doughboys Recipe by Mom

I have been playing with the doughboy recipe for quite some time now and I think I have finally perfected it! I was home sick one day and decided that my comfort food, while I was sick was going to be stew!! I have started to love cooking. My mom(Linda Peterson-Blades) makes best stew and doughboys ever! Stew Ingredients

Vegetables
(can use some or all of these items, I personally leave out potatoes if I am making doughboys/dumplings)
3-6 whole potatoes, peeled
6-8 peeled or just washed whole carrots
1 whole turnip peeled and cut into pieces
1-2 parsnips (optional)
1 onion chopped

Others
1 pound cubed beef
Salt
pepper


Doughboys  Recipe
1 cup of flour
2 teaspoons of baking powder
1/2 teaspoon salt
1/2 cup milk
2 tablespoons of oil

Directions

1. In a large pot on stove top, add a tiny bit of oil, the cubed beef and the chopped onion to the pot. Brown the beef on medium heat until it starts sticking, then add water. Continue cooking until the water boils down, add more water and let it boil down again. This will soften the meat. You don’t need to stir it constantly, just don’t let the water run out!

2. Add all your veggies and cover with water and cook until tender. Once tender if you want doughboys or dumplings, add them now. Make sure you keep the water level just up to the top of the veggies.

3. Making dumplings: Add all dry ingredients to a bowl, then add the wet, mix well but not long and quickly drop blobs of the dough into the pot of stew and cover, DO NOT lift the cover for 12-15 minutes! This should make the gravy too, if you do not make doughboys then add some flour water mix to the pot and stir to make a gravy.

Now serve and salt to your liking!

Boulder Cove Cottages Review, Shelburne, Nova Scotia

Our getaway this summer was beautiful. We had planned on camping, but due to the weather, Mike surprised us with a trip to Boulder Cove Cottages in Shelburne, NS. I loved this place, its beautiful, relaxing and close to my family. My dad and Flo came to visit us at the camp for bonfires and suppers. Dad passed away this winter so I will miss Dad the next time we go but my stepmom, my niece, nephews and other family friends are still there to visit!

This is the outside of our cottage, the Birchtown cottage. There is a BBQ and a deck over looking the water, a fire pit and deck chairs and a picnic table.

I am highly allergic to cats and dogs, however, I still love them, so when opportunities to visit with them arise, I take full advantage (and Reactin and Benadryl lol). At Boulder Cove they had 3 dogs on site and they were adorable and hilarious!

On a side note if you have bad allergies like me, I did bring my own pillow as the pillows in our cabin were feather and I am highly allergic to feathers…and trees, and pollen, and shellfish.. so pretty much everything lol.

This guy was magnum or knucklehead and he has such a sweet personality and LOVES to fetch anything, even in water.

Something else hilarious is Magnum love/hates squirrels. If you say SQUIRREL!!!! really loud and quick he freaks out and goes hunting for them; and if he sees one..get out of the way lol.

This guy was older and calm and sweet. He also had a butt dragging habit that cracked us up when he would slide or drag his butt down the hills. Apparently this is a habit and not a condition as he was at it again during our second visit a few months later. lol

This guy or girl.. I forget.. was Mercedes. My nephew Alex loved him. He was the quiet one of the bunch but so sweet and gentle.

All of the dogs were trained to not enter the cabins, they were all great with kids and very well behaved. They made the vacation so much better!

The location of the cottages and walking/bike trails were amazing as well. Bikes are provided free of charge and helmets. They had bikes for all ages, in the same room there was also many boardgames too!

The whirlpool tub where I spent half my time lol. The bathroom had a tub, plus a stand up shower, Q-tips, shampoo, lotion, makeup pads, towels and face cloths and more in the laundry room. The laundry room is free to use but you need to bring soap! I pack the laundry sheets with the soap built in them.

That is Maddy’s hand feeding the chipmunks! The wildlife was everywhere at the cottage. There were loons, bald eagles, squirrels, frogs, and more I’m forgetting but one of my favorite was hearing the loons in the evening or morning.

The actual cottage was so well stocked I was amazed! This was one of the bedrooms. The bedrooms have 4 pillows, tons of blankets and an extra one in the closet, dresser and nightstands on both sides and Kleenex! Lol One room even had a magicbag.

The kitchen had everything! All cookware, utensils, cleaning things, baking sheets, toaster, coffee maker, bbq tools, roasting sticks for bonfire, tinfoil, plastic wrap, parchment paper, microwave, and too much to think of and list!

They had wireless internet and satellite TV as well, but honestly my goal was to spend time away from those things, but the kids enjoyed having it to use in the evenings.

Down by the dock they have canoes, kayaks, a rowboat and lifejackets to use. They even had fishing rods you could borrow! Many extras and no extra cost!

I loved this place it was quiet, peaceful and beautiful. The owner was awesome, very friendly and talkative. She lives on the property with the cabins so its comforting to know someone’s there if help is needed. Her daughter also became like another family member, Angelia and Maddy played together very well and we loved having her join in! Angelia came knocking on the door the minute we got there so Maddy was having a blast the entire time. The owner let Maddy play inside her house even! They played for hours at the playground area and play house.

Overall my review of Boulder Cove Cottages is, I would 100% recommend trying this place out!
